Quite Delightful Pudding Cupellas

A dessert that is super tasty, quite delightful, very bright, and sugar free!
Wait ... sugar free? Did I hear that right?
Yessssssssss, Shoo-gah freeeeeee!

Once upon a time on a Mother's Day I baked the Delightful Pudding Cupellas for my mama dear. She absolutely loved them. Duh! I mean look at how happy they look! They're THROWING happy vibes in your face. The big deal was baking something sugar free that didn't taste awkward and when these happened I was exuberant!

I turned my cookies into cookie cups by baking them on the opposite side of a cupcake pan. A little bit of foil in the middle helped get everything perfect even though sealing all the cracks in the cookie dough did turn out to be quite demanding at first.

The rest was all about bringing together deliciousness. I whipped up instant sugar free vanilla pudding in a jiffy and then broke sugar free Hershey's chocolates into separate blocks. Next I spooned a generous helping of vanilla pudding into the fully set and cooled cookie cups and stuck each with a Hershey's chocolate block. Something was missing then ...

I realized what was missing then and ran to my fridge. Color - color was missing!
I chopped up some strawberries and garnished the pudding with them.
Aandddd Voila! Done.

I was so in love with how delightful these looked. Abbie and I named these accordingly too. I couldn't decide whether the classic crispy cookie cup was my favorite or the pop of color the strawberries had added, or the way the yellow and red stood out against each other. I think I loved every single bit of these pudding cupellas!

Needless to say it, right?
These made a very bright, happy, delicious, and fun filled Mother's Day celebration!
