Creamy Corn Pasta Salad

A quick and refreshing salad does everybody good. Abbie made some delicious pasta with beef strips recently which meant we had extra boiled pasta in the fridge for me to use. I was craving a good salad that took the least amount of effort to put together. So I combined a bit of this and a bit of that and created this delicious creamy pasta salad with corn (I love corn!). The salad is best when chilled in the fridge, at least that is how I love it the most. It is very refreshing and tastes amazing. Put this together on a hot summer day, chill it really well, and enjoy yourself!

Ingredients:
  • Pasta - 4 cups boiled (I used whole wheat pasta)
  • Sour Cream - 1/4th cup
  • Mustard - 1 tsp.
  • Mayonnaise - 4 tbsp.
  • Sweet Corn - 2 cups
  • Black Pepper Powder - for seasoning according to taste
Method:
Boil the pasta according to packet instructions. Put it in a large bowl big enough for easy mixing. I use a rubber spatula to mix dressing in with salad because it avoids wastage and helps mix really well. You can boil the pasta ahead of time like I did.

Add the sour cream, mustard, and mayonnaise to the pasta and mix well. When combined add the corn and mix together just until everything is fully coated in the dressing. Be gentle with the mixing so you don't end up breaking the pasta or crushing the corn.

Season with black pepper powder and mix well. Transfer to serving dish (optional) and chill in the refrigerator for at least one hour or until fully chilled through before serving.

Note: Whole wheat pasta tends to absorb the sauces/dressings so after refrigeration you may need to add some more mayonnaise. For me an extra tablespoon of mayonnaise was just perfect right before serving.
