Spicy Sweet Potato Wedges That Warm Up The Soul

Look, I love potatoes. You add potatoes to anything and you're instantly in my good books. The case with sweet potatoes though is different; I don't accept sweet potatoes in just about any form in my life. For me to accept sweet potatoes they must be extremely deliciously made and should be so good that it becomes impossible for me to refuse. Like I once tried this pudding like dessert thing made of sweet potatoes and ohhhhhhhhhhhhh dear ... I didn't like it. Then another time we ordered sweet potato fries at Red Robin and they messed up and didn't cook them all the way through like their usual ... nuh uh. I sent them back until they fixed the order. If sweet potatoes aren't done right they taste horrible to me. So trust me when I say this next. These spicy sweet potato wedges are SO good they will warm up your soul!

The most difficult part of this recipe is cutting up the sweet potatoes into wedges. If anybody knows of some trick or hack to make cutting up sweet potatoes easier, please let me know! Hahaha! I have wrists that have once faced partial dislocation so they definitely don't like cutting up sweet potatoes. For that, I call in my sister - the Abbie! She's a darling who always agrees to help me with these. Once the wedges are cut up this recipe takes no time at all on your part. Just dump in all the ingredients, mix, arrange on baking sheets, and pop them in the oven. They turn out so so so soooo good. I have burnt my hands and my tongue and my taste buds so many times because they were SO delicious I just couldn't resist picking them up and eating them as soon as they came out of the oven. Yep, I'm impatient. But you'll be too once you make these. Try them and see it for yourself!

Ingredients:
  • Sweet Potatoes - About two large ones
  • Olive Oil - 4 to 5 tbsp.
  • Black Pepper Powder - 1 tsp.
  • Red Pepper Powder - 1 tsp.
  • Paprika Powder - 1 tsp.
  • Salt - 1 tsp.
Method:

Preheat oven to 450 degrees Fahrenheit. Thoroughly wash your sweet potatoes until completely clean and then use all the strength in your arms to cut them into wedges! If you're like me go and get your big sister to do it and then compliment her on her Hercules-strength! *laughs* Add the wedges to a large bowl. Add the olive oil, black pepper powder, red pepper powder, paprika, and salt 

Toss and stir and toss and stir and repeat until every little bit of the sweet potatoes is fully covered.

Then arrange them on a baking sheet lined with parchment paper. Make sure you do not overcrowd the pan to ensure even baking.

Once you've arranged them all on the baking sheets pour any remaining seasoned oil mixture from your mixing bowl evenly over the wedges.

They'll look very delicious even uncooked but please control yourself! Bake them in the preheated oven for 20 to 23 minutes, keeping a close eye on them so you know they aren't burning. Then take the sheets out of the oven and using a tong or fork flip the wedges over. Return the baking sheets to the oven and bake for about 5 more minutes. Check to make sure they are done to your liking. And then wait patiently for them to cool a bit so you can taste the deliciousness!

And there you have them! Hot, delicious, and spicy sweet potato wedges that will warm up your soul!

Mmmmm mmmmm ... it's okay, you don't have to pretend - I know you want to pick one up right through the picture! I know my mouth is watering just looking at them on my screen. MUST MAKE MORE!
